Autumn is the season of warm colors and intense aromas. When the days get shorter and the air gets cooler, nothing is more comforting than a steaming pumpkin soup, served with a drizzle of San Biase Extra Virgin Olive Oil. Ingredients (for 4 people)
• 800 g clean pumpkin (Delica or Mantovana variety is best)
• 1 medium potato
• 1 golden onion
• 600 ml vegetable broth
• Salt and pepper to taste
• 4 tablespoons San Biase Extra Virgin Olive Oil
• (Optional) Croutons, toasted pumpkin seeds, grated cheese
Preparation:
• Prepare the vegetables: cut the pumpkin and potato into cubes, then finely slice the onion. If you have little time, you can also use pre-cleaned and cut pumpkin, the important thing is that it is of good quality.
• Make a light sauté: in a large saucepan, pour 2-3 tablespoons of San Biase extra virgin olive oil and let the onion soften over low heat, stirring occasionally. Do not let it brown too much: it should just become soft and fragrant.
• Add pumpkin and potato: combine the vegetables in the saucepan and stir to flavor them in the hot oil. After a couple of minutes, cover them with boiling vegetable broth.
• Cook for about 25-30 minutes: let it simmer until the pumpkin and potato are tender and easily blendable.
• Blend everything: use an immersion blender to obtain a smooth and velvety cream. If you like a more fluid consistency, add a little more broth.
• Adjust the flavor: taste and season with salt and pepper.
• Plate and complete with style: pour the soup into plates, then add a generous drizzle of raw San Biase EVO oil. If you wish, you can decorate with croutons, toasted pumpkin seeds, or a sprinkle of grated cheese, to make it even more delicious.
