🌿 What is Novello Extra Virgin Olive Oil?
Novello oil is the first oil of the season, obtained from olives harvested in the very first days of the olive oil campaign. It is bottled almost immediately after milling, without long decantation periods.
For this reason, it has very distinct sensory characteristics:
- Intense green and cloudy color (because it is often unfiltered);
- Herbaceous aroma;
- Strong, pungent, and fruity taste.
It is a more intense oil, which expresses the qualities of freshly milled olives to the fullest.
And “more mature” Extra Virgin Olive Oil?
It's not a matter of good or bad, but of different production times. A more mature oil is one that has had time to decant naturally or through filtration, and has been properly stored for several months. During this time, the oil refines:
- The color becomes clearer and more golden;
- The bitter and pungent sensation lessens.
